1. The Foundation: Beans & Roasts
Great coffee starts long before the water hits the grounds. At Canopy Bake, we believe the origin and roast date are the most critical factors. A bean from Ethiopia will offer floral, citrusy notes, while a Brazilian roast tends toward chocolatey richness.
Always check the roast date; coffee is a fresh product. For the most vibrant flavor, aim to brew your beans between 7 and 21 days after roasting.
2. The Technical Essentials
Our baristas follow a strict protocol for consistency. Here is the technical breakdown for your home brewing:

Grind Size:
- Fine: Espresso (resembles sea salt)
- Medium: Pour-over (resembles sand)
- Coarse: French Press (resembles kosher salt)
- Water Temperature: Aim for 91°C to 96°C. Boiled water that has sat for 30 seconds is usually perfect.
- The Golden Ratio: Use 60g of coffee for every 1 liter of water (or a 1:16-1:18 ratio).
